Image stabilization with focal length that isn't on the list?

I have a Helios 58mm, and Minolta 57mm lens.
With the focal length input menu I can set 55mm or 60mm but not anything in between.
Will Image stabilization work with them?

it will work just fine - you can choose either of those focal lengths and you'll be OK

I always pick the nearest focal lenght under the focal length of the lens, because overcompensation will have a greater blurring effect than undercompensation.

Mathematically you are right for focal lengths that is precise in between the options. In real life focal lengths (57 and 58) aren't as precise as written on the lens (depends on focus distance and place in the image field) and the options (55 and 60) are so close that it shouldn't matter notably. I would choose 55mm for the 57 and 60 for the 58. Since focal lengths don't match perfectly I expect SR to be slightly less effective then specified, but still much better then no SR.
