I have bought a couple of old Tamron lenses (70-210mm f3.5 and 90mm f2.5) and am very happy with them however they do tend to underexpose.

How do I set up the custom menu to adjust the exposure compensation?

Would I have to set this every time I used these lenses?

Sorry for being a numpty but the GX10 manual doesn't really help (well not for me!).

Not a news for Tamron lenses to underexpose.
I've owned 2 and they both did.
to your Q. You can't set camera that it's adjust exposure itself.
If you use Av or Tv mode, you can either:
1) set one of your dials to adjust Ev
2) if you asign dials to other things, you still have dedicated Ev button at the back of the camera. Holding this down, and then turning e-dial (front one I believe) will set you desired Ev.
And yes, you'll have to do this all the time you are using those lenses. If you'll find one value that you'll be happy with just leave it there, but then there will be situation like backlit scene, or lot of white/bright in the scene which will throw the meter off so you'll be adjusting it again anyway.
