I've had K100 for over 2 years, and yes it's colours are tad warmer then sometimes desired, but you don't need to PP to get it different, just go to menu and experiment with saturation and contrast sliders. Try to shoot in both natural and vivid modes with differently set sliders in the menu and you'll see! Before K20 came out, K100 was regarded as Pentax with best SOOC output!
I don't believe tha pro(er) body would have more saturated or punchy colours, if than the oposite would be true, because on basic settings engineers would try to keep the colours as natural as possible, therefore not much saturated...

as for your Q:
S5 received great reviews when it came out, and it has great sensor. But so does K20. For me it comes down to lenses. If you want to buy into Nikon system, go for S5, if you have some Pentax glass and you're happy with it, stay with K series...
