why one star "*" quality video is best

I did some testing of *, ** and *** quality video and I'm convinced that "*" is fine for me. On my 20" LCD screen, I cannot see any difference between * and *** shot under the same conditions. What is clearly different is the file size.

I suspect that the difference is similar to the quality levels of JPEG still shots. So while you wouldn't want to be using one star for JPEGs still images that you intend to modify and crop (I shoot RAW only anyway), video appears fine to me at the lowest quality.

Comments and dissenting points of view appreciated.

There's a video on youtube or vimeo that shows the differences, mostly in the transitions in the bokeh or smooth colors.

Not very noticible, I always use 1 star for video, and RAW/highest star for pictures, unless I plan to do major PP on the video.

Yeah in large blocks of color such as the sky you can see some difference, but really 1 star does a fantastic job a lot of the time.

I've only tested it in the K-x, so i'm not sure about the k-7.

I haven't done the video test, but for JPEG I've done comparisons among the different compression levels * to ****, and I don't notice any differences even when zoomed in 100%. I'm suspecting that the differences will show up in some shots, but I'm not motivated to use anything above **

How much better would you say?

In my opinion, I hardly get results that justify the bigger file size, the * mode gives almost just as good results and almost twice the recording time.
