Final Cut will work wonders on either of those computers. Expect slightly longer render times on the Macbook Pro but overall it'll still be an incredibly fast machine. You also have the option of going portable if you desire. Don't worry about the Macbook Pro's capabilities with editing/rendering HD, the Mac Pro would only really be "necessary" if you were thinking of editing 4K footage or something ridiculous.
