The A7s line is mostly a video or continuous light camera. People shooting HSS or any strobes would be better off with the less expensive A7III or A7rIII. The A7sIII will probably be on par with the A9 in terms of cost. The a7sIII is definitely a niche camera.
Its has been a rumor that the a7sIII will have a global shutter and that is all it has been. Sony has said that the a7III will be "more than what people expect" but they have not been very specific.Sony rolled out the 8K codec a couple of months ago.
Sony's next codec is "XEVC" - could blow the doors off the industry with 8K RAW at 240Mbit - EOSHD
Can Sony pull of an 8K a7sIII with global shutter and meets the needs of professionals? Good question.
