I can't see these those prices stemming the decline in camera sales. I am not saying that it is not worth it, but I don't know what it offers that goes into the price. (Yes, 8K video but it is hardly a specialised video camera.)

There is a lot of pent up demand for a decent mirrorless from Canon. They have a very large user base and they will pay a premium. A lot of used R & RP bodies are going to be hitting ebay. Like the R, I would expect the price of the R5/6 to come down significantly once the first adapters have purchased.
