As I understand it, pro films - bought in some quantity from the same batch run, ensures that color/contrast will be the same. But I don't know it myself if this is true or not.
Regarding exposure errors, I have tested most all Kodak and Fuji color negatives and they all have exceptionally wide exposure latitude and more so on the over side. Kodak Portra 400 is a great example of this.
