For regular 35mm film (non panos) I use my digicam (currently a Z7, but did the exact same thing with the D850 and D750 before it), attach a Nikon 60mm AF macro lens, add the Nikon ES-2 film holder onto that (they are designed to work in unison), point it at a $20 Amazon light pad and snap away in RAW.
The images are converted with negativelabpro.
For 110/120/35mm panos I use the same camera/lens, but a $150 copy stand from ebay (don't invert a tripod, it is so much harder to use accurately and copy stands are meant for this).
I use the Lomo Digitliza holders and the rest is the same as above.
Big important part - I shoot/scan at F11 to make sure there is enough across the image DOF to take care of any lack of flatness. And min ISO.
