I was thinking precisely the same thing last night while perusing. I've had my 110 kit sitting out for months but have only put a few rolls through... Truth be told I just don't like buying another format and have had the kit out because I'm threatening in my mind to put it up for sale. They've always been super cute and capable for what they are and inarguably fun to shoot.... but if I'm honest, I like playing with random tiny half-frame cameras more for about the same quality at the end of the roll. That and I've just got too many dang cameras (the 110 kit I have now was given to me several years ago by a friend who found it in a camera bag of a yard-sale find). I had one as one of my first cameras back in the very early 80s and it was a nice notalgia trip if nothing else.
All that said - the results some folks eke out of them are fantastic.

Yeah an Epsom Vseries is a little lacking for the smaller frame formats (even for 35mm I was sometimes disappointed). I switched DSLR scanning a good while back and you can certainly get more out of them with that kind of workflow.

For regular 35mm film (non panos) I use my digicam (currently a Z7, but did the exact same thing with the D850 and D750 before it), attach a Nikon 60mm AF macro lens, add the Nikon ES-2 film holder onto that (they are designed to work in unison), point it at a $20 Amazon light pad and snap away in RAW.
The images are converted with negativelabpro.

For 110/120/35mm panos I use the same camera/lens, but a $150 copy stand from ebay (don't invert a tripod, it is so much harder to use accurately and copy stands are meant for this).
I use the Lomo Digitliza holders and the rest is the same as above.

Big important part - I shoot/scan at F11 to make sure there is enough across the image DOF to take care of any lack of flatness. And min ISO.

A strange slide taken in Yellowstone National Park. Kodachrome 25, Ricoh Singlex, 55mm f1:1.8 with polarizer filter. July 1971. This was broad daylight.
