Is the K-3 able to take advantage of UHS-I U3 speeds? If so I might have to get that 32GB 2-pack...

Yes. These cards will deliver excellent performance with the K-3

The K-3 fully supports the UHS-I bus. U3 only refers to the fact that the card supports a minimum sustained write speed of 30Mb/s, as this is important for video.

Awesome. Looks like it might be time to pick up a pack of these and retire the rest of my old Class 10 non-UHS 16GB cards

Does anyone have any actual experience with Lexar cards? I've never used the brand and am looking for some input on reliability before pulling the trigger. I'm presently primarilty using Sandisks.

Yeah, I've used Lexar cards in my hacked GH2 for video, sending huge data streams its way. No problem.

I've used Lexar cards (not these particular ones) in my K7 and K5 without a problem.
I have not used Lexar since getting the K3, though I do have a pair of the above cards on order.
