So, you care about them after all.
But I am confused why you would read them from outside darktable with SQLite Manager when you could read them from inside Darktable itself, if they aren't deleted. And also why you start fresh for each photo.
Even if you disable the writing of sidecar files for each image, the history is still saved in the database library.db. The next time you run Darktable and open a previously edited image, the steps you did before are applied to the image. If you want to do a different edit but want to keep the previous edit history, you could do a duplicate. Darktable keeps tab of the versions.
