The best solution to that would be an universal wired remote (cheap from ebay) and a buddy holding that remote

It's real easy to do - just put camera on AF and the camera will only take pictures when the center is in focus (assuming you are not using AF button on the back of the camera as the only autofocus button).
While it's easy, I don't know how viable this solution is since you have to be perfectly in focus every time you ride through the frame. Also, it will start firing only when you reach the center of the frame.
