The HDF models are special editions and not intended as replacements for the GRIII and GRIIIx.
I shoot mostly fifty year old film cameras so I find the idea that a camera introduced five years ago is outdated very strange. People seem to think of digital cameras as having expiration dates, as if they go sour two weeks after the next model is introduced. So what if the GRIII is five years old? If you buy one, it won't suddenly stop working the minute a new model is introduced. What improvement might be included in a GRIV, and would you hold off buying a GRIII because of that mere possibility? I wouldn't. About the only things I can think of would be a higher resolution sensor (not needed) and better weather/dust sealing (not absolutely needed but would be much appreciated).

Looking at all the sample photos this morning, I like the HDF photos much better than I expected to from reading the description last night. I've always felt most digital photos have an overly harsh look that I find unappealing—maybe this is an answer to that problem.

I prefer to keep a good quality multicoated UV filter on my lenses as much as possible. I use filters from Hoya, Nikon, and Pentax. I have never noticed any flare or ghosting that I would attribute the filters, but then I also almost always use a lens hood as well.

It's easy to use a phone as an incident light meter. Just hold the palm of your hand up in the area you want to meter and take a spot meter reading off the palm of your hand. This works great for me. I've never had a bad exposure using this method.

As far as I know, the current made in the USA "Fuji 200" IS Kodak Gold 200. The previous Fuji C200 film was an actual made in Japan Fujifilm product.
Here in the US, you can still find 3-packs of Fuji 400 (which I think is also now "made in the USA" and therefore rebadged Kodak film) at CVS drug stores for around $28. These are 36 exposure rolls and therefore around $9.33 per roll. Still expensive, but not insanely expensive.
Personally I'm mostly shooting black-and-white film these days. If I want a color photo, my iPhone is it.

You have been given good advice already. I particularly concur with the recommendation for the two Petersen books.
I'd also suggest that you hold off on buying another lens and put the 28mm in a drawer and forget about it for a while. Buy at least 10 rolls of film (I'd suggest any 400 ISO black-and-white film but pick what you like) and go out and shoot with only the 50mm. Look at the photos you make and that will tell you whether you need anything else.
With respect to faster films, I'd suggest you try shooting 400 speed film for a while. You may find it does better in low light than you would expect. I'm not aware of any color films faster than 800 ISO. Ilford and Kodak both make 3200 ISO black-and-white films. I have tried the Kodak variety and found it far too grainy for my taste, but I had it developed by a lab and do not know what developer they used. I suspect the 3200 films would do much better with a specialized developer like T-Max, if you develop yourself.

Exactly this. It's the reason my favorite Pentax camera is my SL—no meter, no batteries, no electronics, not much to fail. Of course it did fail one time when the rewind crank broke off, but a quick trip to Eric had it back with a replacement crank in short order. I had Eric do a CLA at the same time, so it should be good for another 25 years or so. That's why I love simple mechanical cameras.

I don't own a GR yet, but to me the thing that stands out about images from the GRIII and GRIIIx is the depth or "3D pop" of the images. I think this is related to the low element count of the lenses (6 elements for the GRIII and seven for the IIIx) compared to most lenses today, when even prime lenses often incorporate 12 or more elements.
