Hi! I am also from France. Even if I have, of course, understood your message, we are supposed to write in English here.
Printed manuals are hard to get on. When I bought my KP (new), I had a printed manual in German, which I cannot read. I had to rely on the English or French PDF online. I think the manual is rather confusing though.
I am happy to see another Pentax user. The K5 is a fine body. The Sigma 17-50 F2.8 is an even finer lens. Have fun! :)

Hi,
I also had to choose between 16-85 and 18-135. Fate decided to choose for me though, with the 18-135 being somehow unavailable new at this time, and the 16-85 found new at a wonderful price.
The 16-85 is a superb lens, great indeed for landscape, its 16mm setting is invaluable. But I also occasionally do miss a little bit extra reach. Still, I think it is the better lens of the two, at least for my usage.

I recommend as high end zoom either the DA 16-85, or the Sigma 17-50, depending if you value more versatility and weather resistance, or aperture. Or you do like me: get both.
Other good possibilities are DA 16-45 (in good shape) or DA 18-135.

I would rather recommend you try to find a DA 16-45 in good shape.

Same.
... But why three of them?

First, we need to know what the crop factor is, which means, are you full frame (K1) or APS-C?
Conventional wisdom is 50mm (in fact 43mm) is "human point of view" for full frame. On APS-C, this is between 28 and 35mm.
For portrait, it is usually done with short telephoto: around 80mm full frame, or 50mm for APS-C.
But focal length is not the only factor. Maximum Aperture is also very important, and autofocus speed can be key for long lenses if you are going to shoot wildlife.

16mm vs 18mm (which is 28mm equivalent) is maybe not much on paper, but it makes a difference in practice.
Of course you can use wider angle. On my KP I have both a Sigma 10-20 and also a Pentax 10-17 fisheye, the latter allowing as large as 180° field of view.
But as a personal opinion, I have found than extreme wide angle tends to lead to boring pictures (unless you have a close subject, especially with fisheye). But of course it's my personal opinion, and your mileage may vary. But for me, 16mm is fine, and I don't really need wider. My poor 10-20 gathering dust and fungus in my drawer is waiting for me to change my mind.

This deal was clearly much better. Enjoy your new K5 and the Sigma 17-70! Manfrotto tripod is really the icing on the cake.

The landscape camera would be the K1, but with a modern lens like the DFA 28-105. But I would recommend the KP with the 16-85 instead, wider view, lighter, zoom *5, and excellent IQ.
Add the 55-300 PLM and you're set.
The 60-250 has excellent IQ, but it is heavy, slow focusing and prone to SDM failure, and cannot be converted. The 55-300 PLM is better in many ways for APS-C usage.

Hood always, if available, as flare protection, physical protection and improved contrast.

I like this picture. Good thing with snails is that you have less risk of motion blur. :-)
