You're quite welcome!
As for what's best, some of it is dependent on the background and the subject distance from the camera
Generally, I use SEL-EX M so it will use the center AF point as the initial focus target and then track the subject from there with the surrounding points.
As for the new Firmware 2.0 AF.C options, I use sensitivity at 5 for maximum tracking of there's a fair amount of erratic movement or if the moving subject fills the frame.
If it's a static subject that might move, I'll use sensitivity 1 (stability).
For the AF.C focus mode, I use 1 (AE+AF) with subject recognition on using Zone AF if I'm doing portraits since this is the mode that allows for eye detection.
For everything else AF.C, I use mode 3 to concentrate on the initial focus point for depth info. I've literally been able to just raise the camera and fire on a moving bird without having to get the follow the bird first to acquire focus. Literally, just point and shoot and it's nailed focus more times than not.

Bee and a small wasp (braconid?) on a GDYC, probably a tickseed/coreopsis. Sigma 150mm f2.8 macro via Ulra adapter on an Oly EM10 mII. DOF very shallow, it could not include the bee's wing tips nor the central region of the flower and the little wasp.

I wholeheartedly agree with you, TrailerBlades. I am so glad I stuck with Pentax 15 years ago when switching from film to digital. I have kept up with the model updates and have the K1 mk2 along with a range of Pentax lenses. My Pentax 15-30 stays on the K1 body most of the time for my landscapes, sunrise & sunsets, weather shots and auroras.
I will switch to either my 150-450 or 70-200 for the theatre work that I shoot for a couple of local theatre companies.
For my landscapes etc., I also do use the Fotodiox Wonderpana filter system, mainly for the GND filter. As there is no filter thread on the inside of the 15-30, the Wonderpana has a collared thread system.
I recently did a photo holiday to New Zealand and using the GPS was a godsend, as it would have been(and in the past has been) a real struggle to remember the locations(and their names ;) ) when getting back in front of the computer, here in Australia.
I love the tonal range and especially the Landscape and Radiant modes for the sunrises. The other thing I find really good about it is the clarity at high ISO, as I often shoot the theatre work at 6400 ISO to allow me to use a higher shutter speed to capture the action during a performance.
I hope you get many hours of photographic enjoyment out of your new K1.

I think that might be better phrased as "some high-end Chinese-made lenses are of similar quality to some Japanese-made lenses".

Same thing happened with guitars, Bill. Broadly speaking, it used to be that the best guitars (mainstream, at least) were made in the USA, followed by Japan, while the cheap and nasty stuff was made in China, so that's what people expected. These days, though, China is producing some absolutely awesome guitars with incredible consistency from one sample to the next - easily the equal of any country, and better than most. They specialise in the lower-to-mid price high-volume market (efficiency and consistency in volume manufacturing seems to be their strong suit) - but they're equally capable of producing the high end stuff. Interestingly, they're no longer producing much if anything in the way of "junk" guitars... it seems that crown goes to India and a few other developing countries. In time, I'd guess their manufacturing methods and quality levels will rise too, just like China's did - and someone else will fill the resulting gap for producing cheap "junk"...

A lot of people think all the Chinese can make is junk because all they ever see from China is junk.
This dates back to when manufacturers went to China and asked if they could make cheap junk to sell in large chain stores. And China said yes for a variety of reasons.
The fact is, the Chinese build to specification, and they are very good at doing it.
This is why a Ryobi tool won't stand up to the same level of demand as a Milwaukee. They are both made by the same Chinese company, my M12 tools are labeled Made in China, but one is made to a higher specification (and has a higher price to the end user because of it).
I just bought a Viltrox 75/1.2 lens, designed and built in China. It is among the best lenses I have ever used, both in optical quality and build. It is certainly right up there with the Japanese designed and built Fujinon lenses that I own, two of which are red badge. People on the Fuji forums even sometimes compare it favourably to the legendary Fujinon 90/2.

Let's not forget Korea. Samyang is kicking but too. If China can make fighter jets and EV cars, then they can make anything. Perhaps, that is one of the reasons Zeiss is contemplating exiting the camera lens market. If a Chinese or Korean or Vietnamese manufacturer can give me the same quality for 1/3 the cost, why would I not look at their offering. Once they have the formula and the manufacturing capabilities, the rest is execution and quality control. Years ago, they used to suck at it but not anymore. The label on the box of my FA Limited trio says Made in Vietnam. Does that mean it is any less of a lens? I can't tell as the quality I am getting out of my lenses is fantastic.

In the film days I shot Pentax, Ricoh, and Olympus using 50mm prime lenses. Then came the digital world. I started in 2003 and started with Canon cameras and lenses. I graduated and moved through three Canon Digital cameras and then decided to try Sony’s mirrorless crop cameras and then two of their full frame mirrorless cameras and I hated the view finders. Finally in my journey through the digital camera world I decided to try Pentax cameras. I really liked them in my film days and ended up loving the digital DSLRs both crop and full frame versions. So, I purchased the K3-Mark II, K1, K1-Mark II, and the Kp. I owned a host of Pentax lenses.
Then came the biggest mistake that I ever made in my photography journey. When Pentax delayed coming out with a new camera after the K3-Mark II, and K1-Mark II, I moved from Pentax to Fujifilm cameras. The x100v, XT4 and then this last fall the XT5. I ran into all kinds of issues that impacted my attitude and creativity. Many of my reasons were subjective, but there were also some technical reasons as well. The color of Pentax was in my view genuinely nicer and more natural than Fujifilm. The fact that there was too much digital noise with the 40-megapixel processor in their XT5 certainly did not help. Then there was the poor handling ergonomics of the Fujifilm cameras. I ended up having to purchase accessories to make them ergonomically easier to handle and I do not have big hands. Most of all I was very tired of having to look through the viewfinder on mirrorless cameras. At times the mirrorless viewfinders would impact my composition.
I have sold all my Fujifilm cameras, lenses, and accessories. Now I have the following Pentax cameras and lenses and love every minute of it. The cameras are the Pentax K1-Mark II and the Pentax K3-Mark III. The lenses are HD Pentax D-FA 24-70mm F2.8 ED SWM WR, the HD Pentax D-FA 28-105mm F3.5-5.6 ED DC WR and the HD-DA 16-50mm F2.8 ED PLM AW. YES!! - I FINALLY CAME BACK HOME and feel like I am in the right place again. WOW! What a trip this has been.

I thought it would be nice to have a thread specifically for photos shot with the K-3 III and the pixel shift feature. There is another thread for pixel shift images Pixel Shifted Images - PentaxForums.com, but it is in the K-1/K-1 II section of the Forum and so I am not sure how appropriate it is to put photos there that were shot with a K-3 III. I'm fine with it, but it is probably best to create a thread in this section of the Forum for those who shoot pixel shift with the K-3 III.
From a personal standpoint, I really like pixel shift images. I find that they add color depth and lower the amount of noise in an image and therefore allow more aggressive processing. My typical work flow is to take these images into Raw Therapee and use its motion correction settings to create a TIFF file that I then import into Lightroom and process from there. Lightroom can technically edit pixel shift images, but it doesn't have a motion correction feature and so you can end up with weird artifacts any place where there was motion during the shooting.
Here are a few images to start:

Tiny Waterfall (DA *16-50mm PLM) Tiny Waterfall by Vincent1825, on Flickr
Gate at Sunrise (DA 15 limited) Gate at Sunrise by Vincent1825, on Flickr
Here is a zip file that should have the standard processing file I use.
