16-50 f2.8 sdm vs 20-40 ltd

I own both the DA 16-50 (but the PLM, newer version) and the DA 20-40 Ltd. Both are very good lenses. But at the end of the day, the DA 20-40 Ltd is my most used lens because it is by far the more convenient and pleasurable (compact, lightweight, well dampered rings) with a color rendering that I value highly.

What am I doing wrong with the K3-mk iii?

I agree with UncleVanya: i have had a look with my usual PT tool and the main difference is a different White Balance. The K70 picture shows a yellow trend. Otherwise, the brightness is slightly darker with the K3 III, which is not a default, but just a different sensor, different softwares, etc. Finally, I don't see the issue with noise.
I have a K3 III. I have noticed a more accurate autofocus with the latest firmware updates.
I can also happen that the AF fine adjustment for a glass is varying with the body.
It seems that it is mainly a different rendering on a RAW that needs anyway to be treated to get the final result.
Hope it helps you to get back confidence in your new tool.

I have shot in JPEG only for years. Nowadays I am shooting in RAW+JPEG.

As long as you shoot far inside the "flight envelope" of the body with good light conditions, a modern jpeg engine does a good job, especialy when you have chosen the good settings (and Pentax cameras allow a lot of adjustements).
But, the settings should be adapted to the actual conditions. That's not practical in all cases and you need to be very experienced with the body you are using.

Where the JPEG engines are obviously limited, in my opinion:
- high dynamic range pictures can be smoothen too much in low and/or high lights
- colors can be wrongly balanced or satured

At the end of the day, if the JPEG OOC is at your taste, you are right to stay with JPEG.
But if you want to change the rendering, now or in the future, it is better to keep and work with the original and full data that a RAW provides.
After shooting a long time in JPEG, I was acustomed to the jpeg rendering. I needed some time to re-educate my taste: it seems your are on the same way.

smc DA 35mm 2.8 macro limited: I wanted a 35mm with a "warmer" rendering and the price of 200 € was a bargain.

smc DFA 100mm macro WR: I have got a taste of the macro abilities with the DA 35 mm macro limited. I wanted more distance to the subject.

I have bought a used K3 a few weeks ago.
It is only my 3rd pentax camera in 33 years, following a Super A that served me 20 years and a K110 that served me 13 years. Both are still in very good shape.
I do change a body when I feel that I REALLY need some more functions or better performance: I think it will be a long time before I will reach the limits of the K3.
