Midday, actually. During winter months the sun never gets very high in Finland. The shadows will also be further elongated by the slope.

You've hit my thoughts on the subject of JPEG shooting to the fullest. Nothing wrong shooting rolls of film to be developed at the chemist but it's nothing more than that.
And another point to add, "SOOC raw" is a serious misnomer since there has to be some processing (and choices that go along with it) before your raw can be shown as a normal image.

Also keep in mind that if you're going to shoot the zoom on a crop sensor Pentax, the falloff won't be included in the crop image.

Yes, and more importantly, those distortions are part of the lens' optical design and not something that varies from copy to copy.
I think a brick wall will not be the best tool to find out if your zoom is decentered. The effect should be more pronounced, the farther you focus, and brick walls get awfully tiny in the frame once you are focusing to 'infinity'.
I would simply take simple landscape shots of a forest and pixel peep its content. Center sharpness falling going towards the edges nonwithstanding, you should make sure the trees on the left hand side are equally sharp to the ones in the RHS.
Because you're testing a lens and not the camera, I would definitely make my test shots manually focused using the live view to eliminate potential AF issues with the K1ii and the zoom. The same goes for brick wall/ newspaper shots.

In film days there were plenty of SLR viewfinders that went to 0.8x and up. But those days having 100% viewfinder coverage was not the expectation.
Like OP, I am interested in hearing from the wise; concrete reasons what makes it easy or difficult, or was it simply a convenient compromise as to not alienate glasswearers but still offer the largest possible image.
