I only shoot RAW now on my K200 and don't use in camera noise reduction at all. I use Aperture, Noise Ninja and Focus Magic.
So for me, it seems like a no brainer that the K7 would not be a bad upgrade... But I will still wait to see the Kx before I do.... Unless the K7's price drops..

I find that if you crop/resize the JPEG file using Photoshop, it will strip the EXIF data out.
I always ensure the final crop/resize is done on the RAW file in Aperture and the EXIF will follow even if I do some adjustments with PS on the JPEG file after.

Unless there is a historical reason for taking a photo and keeping it as real as possible, I believe in making mine as entertaining as possible using what ever means I have... Aperture with Noise Ninja and PSCS with Focus Magic...
