I've gone to Disney several times with DSLR and mirrorless (not at the same time). Bring the K-50 with the 18-135mm for the weather sealing (Florida weather) and the 30mm for indoors/nights. Don't bring the flash to the park, you probably won't use it.
I would also suggest the longest lens you have but only for Animal Kingdom.

I moved from Pentax (K-r) to micro 4/3 (OM-D E-M5). I found the move to be relatively seamless and the customizability of the EM-5 lets you make the control layout very similar to Pentax's. I shoot mostly primes though and the major gap in my Pentax lineup was wide angle. I find the m43 primes to be cheaper and just as available on the used market (at least in Canada).
I really like the EVF on the E-M5 and find myself getting the exposure right in camera much more often than with the K-r. I also haven't had any major issues with the AF system, but I shoot AF-S 95% of the time. The weight saving was pretty significant since I went from zooms+primes to mostly primes.
I found the colour rendering with the Pentax lenses to be much nicer, especially the greens and blues. The E-M5 tends to shoot warm, but it's easily fixable in post. My most-used lens on the K-r was the DA 35mm f/2.4 and found it quick to focus, but super loud. My most used lens on the E-M5 is the Olympus 25mm f/1.8 and I find it really quiet. In fact the whole system is so much quieter than Pentax.
The raw files are pretty good, especially if using ETTR. A little less detail in the shadows, but a lot more in the highlights. As far as noise goes I found that I can get away with at least 1 extra stop on the OMD.
This was just my experience - I didn't own any other Pentax DSLRs to compare against so YMMV.

They're used stuff is actually pretty good. I've purchased both through their website and through an eBay auction and haven't had any problems. The online auction is good because you can go pick it up from their outlet center in Mississauga. For new stuff though I'd rather give Downtown Camera my business since their prices tend to be just a bit better and they don't push accessories and extended warranties on you the way the Henry's downtown location does.

I got a pair of Keen light trail shoes from MEC and have been very happy with them. Wore them hiking in through Death Valley, on my last trip to Alberta, and on photowalks when the weather is a bit warmer. They're light, comfortable, and my feet don't really sweat too much in them. Make sure you also wear comfortable, good socks.

For B&W I develop it myself. C41 I take over to Downtown Camera here in Toronto. It's $6/roll for medium format and 10th roll is free. Scanning I do at home (flat-bed for 120, DSLR for 135). I've also used Toronto Image Works with good results, but Downtown Camera is closer to work.

I have a couple of load-outs depending on the situation.
Photo walk in a group:- K-r with DA 40mm f/2.8 attached
- FA 50mm f/1.4
- Tamron 17-50mm f/2.8
- Sigma 75-200mm f/3.8
- Mamiya M645 with 80mm f/2.8
- Extra batteries, film, cleaning supplies, etc.
Vacation/hiking kit:- K-r with Tamron 17-50mm f/2.8 attached
- FA 50mm f/1.4
- Sigma 75-200mm f/3.8
- MeFOTO BackPacker
- Extra batteries, film, cleaning supplies, etc.
"Light" kit:- K-r with DA 40mm f/2.8 attached
- Tamron 17-50mm f/2.8
- Zeiss Ikon Super Ikonta 531 (folder)
- Extra batteries, film, cleaning supplies, etc.
Super-light kit:- K-r with DA 35mm f/2.4 attached
- Extra battery in my pocket
- OR Q10 with 02 lens attached when cycling
I'm trying to lighten up my light kit some more so I'm looking to pick up the DA 21mm f/3.2 in the next few months and leave the Tamron at home
