I wonder if you have a local college available that has a course on b&w? Been awhile since I last went to one but if it is accessible and the price is still right, you practically get unlimited use of their lab for developing film as well as paper.
You really just need to develop the first roll and it is all downhill from there.

It is better to eliminate those points of specularity in the first place, post processing is a necessary evil with all forms of commercial photography. Relying on PP when you can achieve excellent results in camera in the first place is preferable.
This is pretty much how you do it. Use Big Light diffusers! as they reduce spectacular reflections - I have worked with softboxes bigger than most cars when I have done commercial automotive photography, At one point I used an aircraft hangar to photograph a cut away jet.
A simpler approach (and less expensive) is using Bounce flash - all you need is a large white (or near white) surface, ceilings are very useful here. Big softboxes are extortionately expensive. Avoid un-diffused direct illumination at all costs, as it will only increase specularity. As mentioned above: Polarisers cannot remove reflections from metallic surfaces but the polarisers effect upon glass windows,tyres and other non-metal surfaces on a car cannot be ignored.

I was sceptical about the subsrciption model too but I am a convert after trying it. I use lightroom for basic edits of my 645 files then photoshop with the Nik plugins to finish. The subscription cost is not much and I simply can't see adobe "forcing" us to use the cloud. Not signing up out of principle seems a little counterproductive given the issues the OP is having.

TLDR: Try matrix metering rather than spot, and don't agonize about highlights. What I say may or may not be applicable to your case.
There are many different kinds of "street photography". My style, which I'm still developing, shows people as they go about their day. I don't want them to react to me or pose, so I don't have time to carefully compose. I usually shoot in TAv mode: shutter fast enough to freeze motion, aperture stopped down a little for depth of field, pre-focused 2 meters away.
I use matrix metering to help the camera select ISO in TAv. Always use DNG format so I can adjust exposure later.
Sometimes those settings will blow out highlights. I can try highlight recovery in Lightroom. If the highlights are too far gone, it doesn't much matter because the subject is more important than the background, anyway. I'd rather have a bad background than a subject that's too dark and turns overly noisy when I brighten shadows.
Blown highlights might matter more if your "street photography" is more about the buildings. You can still use matrix metering. Turn on bracketing and pick the brightest, least-blown exposure later.
Here are 2 examples where the subjects were in deep shadows cast by tall buildings. The background had more sunlight. Getting the highlights correct would have meant subjects looking too dark. In hindsight, the subjects have potential but I didn't catch them at especially interesting moments, so the photos could be better. I'm not an expert, I've just played with it a bit - mainly with large format as it happens.
I've found it works either way, albeit with a reduced field of view with the eyepiece removed - If you move further away with no ocular you will get the field of view back (i.e. with the trinoclar tube).
There's no optics in the K-mount piece - so if you want to check how it works, take an SLR (any type of SLR, film or digital - or for that matter a mirrorless) and hold it near the eye piece with no lens attached - you should be able to line it up and to focus the image on the camera - that's all the adapter does, holds the camera in the right position and the right distance away.

Thanks BrianR, you inspired me to experiment a little bit:) Here are my findings:
- F100/2.8 (1:1 macro) - works at 1:1.5 magnification without any add-ons
- M50/4 (1:2 macro) works with 34mm extension tube
By 'it works' I mean sharp picture and coverage of whole 35mm slide using APS-C camera. Unfortunately I was unable to build working configuration using bellows and slide copier - minimal extension of my Novoflex is 48mm what makes coverage of whole frame impossible (with lens I have at my disposal). However, other configurations may work: for instance 35mm macro, or reversed lens, but it requires some experimentation. I wonder if forum members have any experience with it, ability to digitize slides with APS-C camera, bellows, and slide copier could be useful.
