I do all of my conversions in post. I was just trying to figure out a way to check luminance in camera while shooting to get an idea of what the files would look like while deciding to convert or not.

I've looked and searched forums, but can't find any info on reviewing images on the LCD in B&W that are shot in RAW mode and whether they will upload in Bridge in color. Any help appreciated.
