I would suggest the DA*300mm and the HD Pentax-DA 1.4x Teleconverter. This will give you two focal lengths with great IQ: 300 and 420mm, as well as light weight.
I use a similar combo with the FA*300 f4..5 and the HD Pentax-DA 1.4x Teleconverter. The FA300mm is mounted on the camera body by default. And the HD Pentax-DA 1.4x Teleconverter is in the pocket of my jacket. I learned to installed the TC rapidly and smoothly, and it works great.
For me, the superb IQ and the light weight are prime features of this approach when I go bushwalking.

Buy the M. The k mount is more easily mounted and simpler in this case. Add an extension tube or front mounted diopter to get to 1:1. I enjoy using an m42 bellows from time to time but I think it’s a labor of love that takes me back to using my bellows years ago. It’s easier to mount and unmount a k mount. You will likely use it more due to that.

Unless I'm mistaken the MX will work through the full range of shutter speeds without a battery.

Check out Heie's excellent article, which doesn't only apply to long exposures, for advice. You may need to shift a bit between turning and supporting positions of you left hand, but good elbow positions surely help with stability.

Loads of them. Look for camera holster bags. Also look at some of the mirrorless oriented bags bags. A smaller dslr with a single lens fits in many of them. Lastly, look for camera wraps these are padded cloths that self stick with Velcro to protect gear.
Another option is a camera clip to keep the camera out when walking.
My favorite solution however is the Think Tank rotation series. It’s a cool backpack with a camera bag lower section you can spin to the front while wearing the bag.

I love his sense of visual humor and every semester I use his contact sheets as examples to students that you don't do one and done. You shoot at least 36 and the keeper may be a tight crop on one of those shots.

I have way too much photography gear already, and way too much "stuff" in general :o I've no doubt Santa will be bring me a couple of bits and pieces, whether photography-related or otherwise, but it's all about the occasion for me... eating and drinking a little too well, sitting in front of a crackling log fire, watching the inevitable movie and sit-com re-runs on TV, and spending quality time with my family. That's the Christmas I'm hoping for, and if Santa could see his way to making it as comfortable, safe and uneventful as possible, I'll happily forego any material gifts :)

Finicky due to complex electronics. Can be wonderful camera but can also be flakey. MX and KX are less complex and good upgrades from the k1000.

Nice. Looks like you’ve got brown pelicans, Brandt's cormorant, and Heermann's gulls in those shots.
Her is another brown pelican. This one was taken in Oregon.

If it works for you it works!
...I would suggest that you consider changing how you place you camera on the Arca plate. Orient the camera on the plate so the clamping knob points AWAY from you, and then the bubble level will be visible.
I mention that because I had the same issue with a new Arca plate this summer. Only in my case, the knob was longer so it poked me in the face. Put the camera on the plate so that knob points away from you. While you can't see it then, it should still easy to reach and (at least with my plate) easy to operate.

Perhaps you could just put it in TAv mode. Pick the shutter speed and F stop. If you pick aperture bracketing it will take three pictures in a row with different f stops. That should cover your bases for any error in focus or exposure.
