Interchangeable VFs is a very interesting idea.
It's true there is little room in the pentaprism area of most DSLRs (although there is a nice little opening in the upper-front region of a pentaprism that's perfect for a projector).
What's interesting is that the Pentax 645 system does have a lot of room in the optics between the pentaprism and the VF eyepiece. The 645 has a long tubular section in the VF optics where a flip-in mirror could be placed with the EVF screen and optics located directly below the VF tube inside the camera body behind the sensor (Pentax 645Z Cut in Half - CP+ 2015 | PentaxForums.com). Some of the circuit boards in the back of the camera would need some redesign to accommodate the EVF but there's a lot of space back there.

The irony of EVF technology is that one of its greatest strengths -- showing the scene as the sensor sees it -- is also one of its greatest weaknesses. On the positive side, I do like how EVFs clip the over-exposed and under-exposed areas. That helps make better exposure decisions. And I like that they can show the image using the selected white balance. That helps make better WB choices and avoid bonehead mistakes like accidentally taking pictures outdoors with the tungsten WB setting.
On the negative side, I find the clipped sensor view to be suboptimal for composition. The sensor and EVF can't replicate the dynamic range of the eye so they fail to show the full scene. The clipping and contrast of the EVF make it hard/impossible to see the compositional elements in both the highlights and the shadows.
Thus I really only want an EVF on an intermittent basis. I most want an image review feature that lets me chimp the image I just took without taking my eye off the OVF. If the camera slightly delayed dropping the mirror, it could flash the captured image in viewfinder for some user-selected duration. A preview or live view mode (with silent electronic shutter shooting modes) would also be awesome.
A hybrid OVF/EVF should be possible. For example, one design might be a tiny projector in the pentaprism hump that projects an image on to the focusing screen. When the mirror is up, the projector is on and when the mirror drops, the projector shuts off.

There are at least two Sony sensors that could go into the K-1's successor right now: the one in the Sony A7R III (42.4 MPix @ 10 fps) and the one in the Sony A9 (24 MPix @ 20 fps). The former looks like the better bet both in terms of being a logical upgrade (both higher resolution + higher frame rate) and cost (if the body prices are any indication, the fancy stacked sensor-ADC chip of the A9 costs a bundle.)
Similarly, Sony has two options for the 645 depending on whether Pentax wants a higher resolution crop-MF or a full-frame MF successor to the Z.
