It would be interesting to see the raw file, under ussally normal light the red channels is far from clipping. this look to be using daylight light. if your whites are not clipping then the reds should have been okay

A lot of practice on tracking moving objects, pick a small target and try and keep it centered on your subject, I always try and track the head if I can.
One way you can see how well you track is by using a slower shutter speed and pick a point on your target, if your sinking Syncing is off as you pan it will show up rather quickly
I Iike to use a heavier lens for most of my work 7.5 lbs for just the lens, the smaller light lenses I find are much harder to use, even with the swallow I like the larger lens.
As for how the camera is setup I like to use 9 point dynamic and also 3D tracking ( this is where you start by placing the AF point over the target and then let the 3D tracking follow the target around the FOV
As for AF hold I like to start off in the mid level to faster
