I have been down the Kern in California a couple of time, and you indeed do get wet. I like several of the suggestions here - the two camera option like the Optio WR. The RAW+ in another excellent idea, however that is going to consume SD cards quickly. That said, 32 GB SD cards are relatively cheap in the $25 range. A couple of those would tide you over nicely. Personally, I would forgo the wide angle (I would rather leave my 12-24 and 8-16 home [neither of which are WR] - you can only bring so much with you) and stitch. You are going to stitch anyway even with the WA. I would go out in the evening and practice a bit at 18mm (wide and low light) handheld, then come back in and use something like Microsoft ICE (its free) to assemble them.
By the time you haul out, its afternoon and the shadows are going to be deep and getting deeper, great for photography - bad for handholding. A small light travel tripod (the table top version) would be good for this. Just some sort of mechanical support. I would take an IR remote and NOT the wired one - I would be afraid of not pushing the rubber cover (over the connection) back down.

I would suggest a "WR" lens - and the R means resistant not proof. Something like the smc PENTAX-DA 18-135mm F3.5-5.6 ED AL [IF] DC WR - so as to limit the amount of lens changes. Also, a water tight storage container of some type.
