I don't think it's a fault or problem with the software, per se. It's the way certain demosaicing algorithms work. I'm not sure what the various advantages or disadvantages are of each algorithm, but this is why - in some software (RawTherapee, for example) a choice of algorithms is offered...

What you're seeing is undoubtedly maze artefacts caused by Darktable... that said, it can happen to a greater or lesser extent in many RAW converters.
