Not keeping my servers up to date? Not going to happen. Our patching regime has prevented new vulnerabilities from being exploited on several occasions. (I don't administrate Windows systems, but my impression is that MS are taking their enterprise products more seriously now.)
Camera firmware are generally updated in a very controlled manner. By all means, if you don't experience any problems and don't need new features there's no compelling reason to upgrade.
My take is that updates get published for a reason. I still prefer to wait a few days to see if there indeed are any bugs, though.
