I use Spot (center point) AF in AF.C mode (K-3II/Sigma 150-500). Manual focus would be too stationary for the variety (areas/movement) I usually want to cover, though you may be having success with Manual AF mode as you have said. Having an effective/appropriate depth of field is also a factor.
I also have the following settings in my camera menu: 1st Frame Action in AF.C set to "Release-Priority", Action in AF.C Continuous set to "FPS Priority", and Hold AF Status set to "Off".
