I find P-TTL is fine for not having to think about flash in manual mode. I typically dial it to -1eV FEC and leave it there through an event.
When missing the shot isn't an issue, I'll often revert to manual flash too, to get control/predictability.
I think the automatic modes can be problematic with flash - I find they often choose inappropriate shutter speeds, or take the ISO too high.

It's not as hard as you think, and you get back real control of motion blur versus depth of field versus graininess.
Depending on the Pentax, if you want to quickly check the exposure, put it into Live View.
On bodies that don't offer this, you can do a Preview.

Remember back button works superbly with AF-S.
It's the only method I use on all my cameras.

I'm a little confused why you're getting so many.
The key is to get that first beep, by panning to track the subject, and then take the first picture of your burst sequence.
If you stray off the selected AF point/subject and don't have AF Expansion/Hold, focus again and listen for the beep to begin a new burst.
As you can tell, there are advantages to Back Button Focusing in all this.

Remember, on perhaps no Canon do you get focus confirmation in their AF-C (servo, or whatever they call it).
