I expect it's only used for filming very short bursts, both time and distance wise. With a street closed off for filming and all vehicles moving in a known pattern, keeping your eyes on the live view screen would be doable.
(Of course, it's also possible that he doesn't even have the screen on. If it's meant to give a POV shot, the focus could just be set to a certain distance and then you have him go through the paces a few times to get enough footage.)

Though probably would cost less to replace if he had to ditch the bike due to a mishap. ;)

For some reason this picture was quite noisy, despite being ISO 200. (It's also very bland colour and contrast-wise, but that seems to be an issue with the lens I took it with.)
